BANANA BREAD

 

  ½ c oil                                                1 c white sugar

  2 eggs beaten                                       2c flour

  3 bananas food processed                   1 tsp baking soda

  ½ tsp baking powder                           ½ tsp salt

  3 tbls milk (double recipe ¼ c)

  ½ tsp vanilla

  Beat oil and sugar together. Beat eggs and banana in a food processor until very smooth (this is what makes this loaf    so light and fluffy) Add to oil and sugar, beat well

  Add dry ingredients , milk and vanilla, beat at high speed

  Pour into greased and floured 9x5x3” loaf pan.

  Bake at 350 F for approx. 1 hour (usually takes longer) Pierce loaf with a bamboo shish kabob stick comes out clean

  *add blueberries, saskatoons or chocolate chips for a different variation
